Preparation
- Preheat your oven to 350°F (175°C) and let it warm up.
- In a bowl, mix together the flour, baking powder, salt, and cinnamon until there are no lumps.
- In another bowl, beat the softened butter with granulated and brown sugars until fluffy.
- Add the egg and vanilla to the butter mixture and mix until smooth.
- Gradually add the dry ingredients into the wet mixture until just combined.
- In a small bowl, combine the filling ingredients: brown sugar and cinnamon.
- Spread half the cookie dough on parchment paper, sprinkle with the filling, and roll it up tightly.
- Slice the rolled dough into rounds and place them on a lined baking sheet.
Baking
- Bake in the preheated oven for 10-12 minutes or until golden brown.
Notes
Serve warm and consider drizzling with icing. Store in an airtight container for up to 3-4 days at room temperature or refrigerate for up to a week. Cookies can be frozen for up to 3 months.
