Cookie Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Make sure it's at room temperature.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg At room temperature.
  • 2 tsp vanilla extract
Filling Ingredients
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and let it warm up.
  2. In a bowl, mix together the flour, baking powder, salt, and cinnamon until there are no lumps.
  3. In another bowl, beat the softened butter with granulated and brown sugars until fluffy.
  4. Add the egg and vanilla to the butter mixture and mix until smooth.
  5. Gradually add the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, combine the filling ingredients: brown sugar and cinnamon.
  7. Spread half the cookie dough on parchment paper, sprinkle with the filling, and roll it up tightly.
  8. Slice the rolled dough into rounds and place them on a lined baking sheet.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until golden brown.

Notes

Serve warm and consider drizzling with icing. Store in an airtight container for up to 3-4 days at room temperature or refrigerate for up to a week. Cookies can be frozen for up to 3 months.
