Preparation
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix well until everything’s nicely blended.
- Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
Baking
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes or until the bites are set and lightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm with a drizzle of maple syrup, yogurt, or fresh fruit for a nutritious breakfast. Store in an airtight container in the fridge for up to 4 days or freeze for longer preservation.
