  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup optional, for added sweetness
  • 1/2 tsp baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix well until everything’s nicely blended.
  3. Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
Baking
  1. Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
  2. Bake for 18–20 minutes or until the bites are set and lightly golden on top.
  3. Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with a drizzle of maple syrup, yogurt, or fresh fruit for a nutritious breakfast. Store in an airtight container in the fridge for up to 4 days or freeze for longer preservation.
