Preparation
- In a large bowl, mix together chopped strawberries, plain Greek yogurt, honey, and vanilla extract until well combined.
- Scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet to form clusters.
- Place the baking sheet in the freezer and freeze until completely solid, about 1-2 hours.
Chocolate Coating
- Melt the chocolate by combining chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15-30 second intervals, stirring in between, until melted.
- Remove yogurt clusters from the freezer and dip each one into the melted chocolate using a spoon for thorough coating.
- Return the coated clusters to the prepared baking sheet. Optionally, sprinkle a pinch of sea salt on top.
- Return the clusters to the freezer for a few minutes to harden the chocolate.
Notes
Store clusters in an airtight container in the freezer for up to 2 months. For added flair, try using raspberries or blueberries instead of strawberries.
