  • 1 tablespoon vegetable oil
  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 teaspoons minced garlic
  • 1/4 cup low sodium chicken broth or water
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • Salt and pepper, to taste

Method
 

Cooking Steps
  1. Heat 1 teaspoon of oil in a large pan over medium heat.
  2. Add green beans and cook for 3-4 minutes until tender. Remove from pan and set aside.
  3. Season chicken with salt and pepper. In the same pan, heat remaining oil over high heat.
  4. Cook chicken in batches until browned and cooked through, about 3-4 minutes per side.
  5. Add garlic to the pan and cook briefly. Return green beans to the pan.
  6. In a bowl, whisk together chicken broth, honey, and soy sauce.
  7. Mix cornstarch with water in a separate bowl.
  8. Pour the soy sauce mixture over chicken and green beans. Cook briefly, then whisk in cornstarch mixture.
  9. Bring to a boil and cook until the sauce thickens, stirring constantly.
  10. Serve hot over rice.

Notes

For extra crunch, sprinkle some sesame seeds on top. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
