  • 1.5 cups mozzarella cheese Use shredded mozzarella for best results.
  • 1 cup almond flour Can substitute with coconut flour, adjusting the amount.
  • 4 tablespoons garlic butter You can use fresh minced garlic instead.
  • 1 large egg For vegan option, use flaxseed or chia seed mixture.
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • Italian seasoning (optional) Add for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt the mozzarella cheese and garlic butter together in the microwave. Stir until well combined.
  3. In a separate bowl, mix the almond flour, baking powder, salt, and Italian seasoning (if using).
  4. Add the melted cheese mixture to the dry ingredients and stir until combined.
  5. Add the egg and mix until a dough forms.
  6. Transfer the dough to your prepared baking sheet and press it out to your desired shape and thickness.
Baking
  1. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the flatbread is crispy.
  2. Allow to cool slightly before slicing and serving.

Notes

Serve with marinara sauce for dipping or use as a low-carb pizza base. Leftovers can be stored in the fridge for 4-5 days and can be frozen for longer storage.
