  • 1/4 teaspoon cream of tartar Helps stabilize egg whites.

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Separate the egg whites from the yolks.
  3. In a large bowl, whip the egg whites and cream of tartar until stiff peaks form.
  4. In another bowl, mix the egg yolks, shredded cheese, and salt until well combined.
  5. Gently fold the egg yolk mixture into the whipped egg whites until no white streaks remain.
  6. Spoon the mixture onto a baking sheet lined with parchment paper, forming small cloud shapes.
  7. Bake for 25-30 minutes or until the clouds are golden and firm.
  8. Let them cool slightly before serving.

Notes

For best results, whip egg whites until super stiff for maximum volume. Serve with toppings like avocado, smoked salmon, or cream cheese. Stored in the fridge, they last about 3-4 days; can be frozen for longer storage.
