Ingredients
  

For the cookie dough
  • 1 cup Unsalted butter, softened Use room temperature butter for best results.
  • 1 cup Granulated sugar
  • 1/2 cup Light brown sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2.5 cups All-purpose flour Sifted
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt Skip if using salted butter.
For folding in
  • 1 cup Chopped pecans Keep them chunky for better texture.

Method
 

Preparation
  1. Gather your ingredients.
  2. Preheat your oven to 350°F (175°C).
  3. Cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. In a separate bowl, sift together the flour, baking soda, and salt.
  6. Gradually mix the dry ingredients into the butter-sugar mixture to form a soft dough.
  7. Fold in the chopped pecans gently.
  8. Chill the dough in the fridge for about an hour.
Baking
  1. Scoop the dough, roll it into balls, and place them on a parchment-lined baking sheet, leaving space between each.
  2. Bake for about 9–12 minutes until the edges are golden and the centers are still soft.
  3. Let the cookies cool on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for about a month.
