Main ingredients
  • 1 head broccoli, chopped
  • 1/2 large yellow onion, diced or 1 whole onion
  • 5 slices turkey bacon
  • 8 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400 degrees.
  2. Cook the turkey bacon according to the package instructions until crispy.
  3. Once cooked, remove the bacon from the pan and chop it into small chunks.
  4. In the same pan, add olive oil and the chopped broccoli and onion. Sprinkle with salt and pepper. Sauté for 5-10 minutes until softened.
Mixing
  1. In a separate bowl, whisk together the eggs, cheddar cheese, garlic powder, salt, and pepper until nicely blended.
  2. Remove the veggies from the heat. Mix them with the chopped turkey bacon in a large greased baking dish, spreading everything evenly.
  3. Pour the egg mixture over the top, ensuring all the goodies are covered.
  4. If you like extra cheese, sprinkle some on top.
Cooking
  1. Bake in the oven for 20 minutes.
  2. Let cool, then cut into squares, and dig in!

Notes

Store leftovers in an airtight container in the fridge for up to 4-5 days. For freezing, cut into squares and reheat in the microwave or oven.
