Preparation
- Preheat the oven to 400 degrees.
- Cook the turkey bacon according to the package instructions until crispy.
- Once cooked, remove the bacon from the pan and chop it into small chunks.
- In the same pan, add olive oil and the chopped broccoli and onion. Sprinkle with salt and pepper. Sauté for 5-10 minutes until softened.
Mixing
- In a separate bowl, whisk together the eggs, cheddar cheese, garlic powder, salt, and pepper until nicely blended.
- Remove the veggies from the heat. Mix them with the chopped turkey bacon in a large greased baking dish, spreading everything evenly.
- Pour the egg mixture over the top, ensuring all the goodies are covered.
- If you like extra cheese, sprinkle some on top.
Cooking
- Bake in the oven for 20 minutes.
- Let cool, then cut into squares, and dig in!
Notes
Store leftovers in an airtight container in the fridge for up to 4-5 days. For freezing, cut into squares and reheat in the microwave or oven.
