Ingredients
  

Egg Mixture
  • 6 large eggs Whisked with milk for best results.
  • 1/4 cup milk
  • 1 cup cheese Shredded; any preferred type.
  • 1 cup bell peppers Chopped; use any colorful variety.
  • 1/2 cup onions Chopped; any type of onion.
  • 1 cup spinach Fresh, chopped.
  • 1 teaspoon salt Adjust to taste.
  • 1 teaspoon pepper Adjust to taste.
For Greasing
  • 1 tablespoon cooking oil or butter To grease the muffin tin.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together eggs and milk until smooth.
  3. Stir in cheese, chopped bell peppers, onions, and spinach. Season with salt and pepper.
  4. Grease a muffin tin with cooking oil or butter.
  5. Pour the egg mixture into the muffin cups, filling each about 2/3 full.
Baking
  1. Bake for 15-20 minutes or until the omelettes are set and slightly golden on top.
  2. Allow to cool for a few minutes before removing from the tin and serve warm.

Notes

These omelettes can be stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat in the microwave or oven to enjoy!
