  • 3 pieces ripe bananas (about 1 ½ cups mashed) Make sure bananas are super ripe for sweetness.
  • 2 cups rolled oats Use certified gluten-free oats for a gluten-free version.
  • cup honey or pure maple syrup Agave syrup can be used as a vegan option.
  • 2 large eggs 1 tablespoon flaxseed meal + 2.5 tablespoons water can replace 1 egg for a vegan version.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add rolled oats, honey or maple syrup, eggs, baking powder, and vanilla extract; stir until well combined.
  4. Grease an 8×8-inch baking dish or line it with parchment paper.
  5. Pour the mixture into the prepared dish and spread it evenly.
Baking
  1. Bake for 25-30 minutes until golden brown.
  2. Let cool for at least ten minutes before slicing into squares.

Notes

These bars can be stored in the fridge for about 5-7 days or frozen for up to 3 months. For serving, consider drizzling honey or peanut butter on top. Pro tip: Let them sit before slicing; warm bars can fall apart!
