Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 pieces eggs
  • 1.5 cups milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
Apple Filling
  • 2 pieces apples, peeled and sliced
  • 1 tablespoon butter for sautéing apples
  • to taste Cinnamon for flavor
  • to serve Maple syrup or powdered sugar for serving

Method
 

Preparation
  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and vanilla until smooth.
  2. Let the batter rest for about 30 minutes for fluffier crepes.
Cooking Crepes
  1. Heat a non-stick skillet over medium heat and melt a little butter.
  2. Pour a ladle of batter into the skillet, swirling to cover the bottom evenly.
  3. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
  4. Flip and cook for another minute.
  5. Repeat with remaining batter.
Apple Filling
  1. In another skillet, sauté the sliced apples in butter and sprinkle with cinnamon until tender.
Serving
  1. Serve the crepes filled with the apple mixture and drizzle with maple syrup or dust with powdered sugar.

Notes

These crepes can be refrigerated for up to 2 days, stacked with parchment paper, or frozen for about a month. Reheat in a pan or microwave until warm.
