  • 200 g rolled oats
  • 1 large apple, grated
  • 2 eggs
  • 1 tsp cinnamon Don’t be shy with the cinnamon!
  • 50 ml almond milk Soak oats beforehand for a chewier texture.
  • 1 tsp baking powder
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 180°C (356°F) with upper and lower heat.
  2. Throw all the ingredients into a bowl and mix well until everything combines.
  3. Use a spoon to scoop small dollops of the mixture onto a baking tray lined with parchment paper.
  4. Bake the coins in your preheated oven for about 15-20 minutes, or until they’re golden brown.
  5. Let them cool, then dig in and enjoy!

Notes

For a fun twist, pair with Greek yogurt or peanut butter. Store in an airtight container in the fridge for up to 5 days or freeze for about 2 months.
