  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat butter and brown sugar until light and fluffy.
  4. Add the egg, apple cider, and vanilla extract, mixing well.
  5. Gradually add the dry ingredients to the wet mixture. Combine until just mixed.
  6. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes until lightly golden. Allow to cool.
Assembly
  1. Spread caramel sauce on the flat side of one cookie, top it with another to create your whoopie pie.

Notes

Chilling the dough for about 30 minutes can help the cookies hold their shape better while baking. For an extra layer of flavor, use maple syrup instead of some apple cider. Always ensure your butter is softened for the best results.
