Method
For the Apple Cider Reduction
- Simmer the apple cider over medium heat until it reduces to about 1/2 cup.
For the Cheesecake Filling
- Beat together the cream cheese and sugar until smooth.
- Mix in the vanilla and 2 tablespoons of the apple cider reduction. Set aside.
For the Apple Cider Cookies
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
- In a separate bowl, beat the softened butter and brown sugar until fluffy.
- Add in your room-temperature egg yolks, vanilla, and the remaining apple cider reduction.
- Gradually mix in the dry ingredients.
For The Spiced Sugar
- Combine the sugar, cinnamon, nutmeg, and allspice in a small bowl.
Serving
- Serve warm, straight out of the oven, with a dollop of the cheesecake filling on top or with a cup of hot apple cider.
Notes
Chill the dough for about 30 minutes to help the cookies hold their shape. Don't skip the spiced sugar for extra flavor!
