Ingredients
  

For the Apple Cider Reduction
  • 2 cups apple cider Simmer until reduced to 1/2 cup.
For the Cheesecake Filling
  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla
  • 2 tbsp apple cider reduction Use from the reduced cider.
For the Apple Cider Cookies
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks at room temperature
  • 2 tsp vanilla
For the Spiced Sugar
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch ground allspice
  • 1-2 tbsp salted butter, melted For brushing on cookies before adding spiced sugar.

Method
 

For the Apple Cider Reduction
  1. Simmer the apple cider over medium heat until it reduces to about 1/2 cup.
For the Cheesecake Filling
  1. Beat together the cream cheese and sugar until smooth.
  2. Mix in the vanilla and 2 tablespoons of the apple cider reduction. Set aside.
For the Apple Cider Cookies
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In a separate bowl, beat the softened butter and brown sugar until fluffy.
  4. Add in your room-temperature egg yolks, vanilla, and the remaining apple cider reduction.
  5. Gradually mix in the dry ingredients.
For The Spiced Sugar
  1. Combine the sugar, cinnamon, nutmeg, and allspice in a small bowl.
Serving
  1. Serve warm, straight out of the oven, with a dollop of the cheesecake filling on top or with a cup of hot apple cider.

Notes

Chill the dough for about 30 minutes to help the cookies hold their shape. Don't skip the spiced sugar for extra flavor!
