- Add in the oats, vanilla extract, and baking soda, and stir well.
- Drop spoonfuls of dough onto a baking sheet.

- Bake for 12-15 minutes until golden brown.
- Let them cool before serving.
Notes
For extra crunch, add some chopped nuts or chocolate chips. Adjust honey for desired sweetness. If dough is sticky, chill it before baking. Try different nut butters for a twist!
