Ingredients

Main Ingredients
  • 4 medium medium zucchinis (about 1.5 pounds) Fresh zucchinis are best.
  • 2 tablespoons olive oil Can substitute with another oil if desired.
  • 1 teaspoon garlic powder Enhances flavor.
  • 1 teaspoon onion powder Adds depth to seasoning.
  • 1/2 teaspoon paprika Optional for a smoky flavor.
  • 1/4 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 1/4 cup grated Parmesan cheese Optional for extra flavor.

Method

Preparation
  1. Wash and dry the zucchinis, cutting off the ends. Slice them into rounds about 1/4-inch thick.
  2. In a mixing bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to create your seasoning blend.
  3. Toss the sliced zucchini in the seasoning mix until they’re nicely coated.
Cooking
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Place the seasoned zucchini slices in the air fryer basket in a single layer. Don’t overcrowd them; you might need to cook in batches.
  3. Air fry for 12-15 minutes, shaking the basket halfway through for even cooking. You want them golden brown and crispy.
  4. If you’re feeling fancy, sprinkle the grated Parmesan cheese on top during the last 2 minutes of cooking.
  5. Once done, remove the zucchini and let them cool slightly before serving.

Notes

Store leftover Air Fryer Zucchini in the fridge in an airtight container for about 3-4 days. Reheat in the microwave or air fryer for best results.
