  • 2 pounds Chicken thighs
  • 1 pound Ground beef
  • 2 cups Zucchini, chopped
  • 1 cup Bell peppers, chopped
  • 4 large Eggs
  • 1 cup Cheese (cheddar, mozzarella, etc.)
  • 1/2 cup Heavy cream
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 3 cups Spinach, fresh
  • 2 cups Cauliflower rice

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Sauté garlic until fragrant (don’t burn it!).
  4. Add your choice of protein (chicken or beef) and cook until browned.
  5. Next, toss in the veggies—zucchini, bell peppers, and spinach. Stir until tender.
  6. Add a splash of heavy cream and cheese, stir to combine until gooey and dreamy.
  7. Serve hot and watch everyone dig in!

Notes

Batch-cooking proteins saves time for busy weekdays. Leftovers can be stored in airtight containers for up to 4 days in the fridge or frozen for up to 3 months. Reheating is easy in the microwave or oven.
